Hot German Potato Salad

This potato salad goes great with bbq, pork chops or just on its own. I could eat this all day! Growing up we had this at all the family gatherings and now is a staple in our own household!

Main Ingredients

5 lb bag new/red potatoes

8 - 10 slices bacon

1 small onion chopped

1/2 cup apple cider vinegar

1/4 cup sugar

salt and pepper to taste


1Cook potatoes with skin on until near tender.

2Let cool and remove skins. Cut potatoes into a small dice. Salt and pepper to taste.

3Cook bacon in frying pan and drain on a paper towel. It should be crispy. Crumble and mix into potatoes.

4Sauté onion in 2 Tbs bacon grease. When onions are clear add sugar and vinegar and reduce by about half.

5Pour on potatoes and mix well.

6Serve hot!

Additional Notes

Can be fixed ahead of time and reheated.
