Main Ingredients

1 - 8 ounce brick of cream cheese, softened

8 cups of fresh spinach

1 - 14 ounce can of artichoke hearts, not in oil

1 cup of shredded parmesan

1 1/2 cups of mozzarella

2/3 cup of sour cream

2 cloves of garlic minced

1/2 to 1 teaspoon of salt

1/2 teaspoon of pepper

Preparation

1In a large saute pan, cook down the spinach on a medium heat until wilted and shriveled. Press some of the water out of the cooked spinach in a fine mesh sieve. Cut the spinach up into smaller pieces.

2Preheat oven to 350F.

3In a large bowl combine all the ingredients together, reserve 1/2 cup of shredded mozzarella and 1/3 cup of Parmesan, with either an electric hand beater or a spoon. Cream them together till everything is incorporated and mixed well. Taste and add more seasoning if you wish.

4Spread the dip into a shallow casserole dish, sprinkle the reserved cheese on top. Place in the oven and bake until bubbly and has brown spots on top.

5Serve right away with crostinis or tortilla chips.
