Honey Roasted Nut + Seed Granola

1 cup cooked quinoa
1 cup slivered almonds
1/2 cup raw pumpkin seeds
1/4 chia seeds
1/4 cup whole flaxseed
4 tbs melted coconut oil
1/4 cup honey or maple syrup
1 tsp vanilla extract
1 tsp flaked sea salt
1Combine quinoa, almonds, and seeds in a medium-large-ish bowl. In a small bowl, microwave coconut oil until melted and stir in honey or syrup. Whisk in vanilla and pour over quinoa mixture.
2Spread onto a parchment lined baking sheet and bake at 350 for about 20-30 minutes, watching to make sure the almonds don’t get too brown.
3Remove from oven and sprinkle with salt.
4Store in a container with a tight fitting lid or zip-lock bag for up to a week.
