Honey Garlic Beef Jerky
A sweet and spicy meat snack.

1/2 cup honey
2 tbl black pepper
2 tbl salt
2 tbl garlic powder
1/2 tsp crushed red pepper flakes
1Trim off all of the outside fat.
2Cut the roast into smaller pieces and used a handheld meat tenderizer to break up the meat fibers and make the jerky more tender and allow the marinade to better penetrate the meat.
3Put the tenderized pieces in the freezer to allow them to get firm to make slicing easier (about an hour).
4Slice the pieces of meat. It doesn't matter if you go with or against the grain.
5Mix the seasoning with the honey and pour the mixture over the meat in a bowl and stir until the meat is thoroughly coated.
6Cover the container and place in refrigerator for 18-24 hours.
7Remove meat and place on dehydrator racks.
8Dehydrate for 5-6 hours.
9Remove from racks and let completely cool on counter in room temperature.
10Store in refrigerator for up to 2 weeks or freeze up to 3 months.
