Honey Bee Cookies

A twist on the chocolate chip cookie and peanut butter cookie that is mind boggling. Can't decide if it reminds me of Spring or Autumn. Either way, this cookie packs a surprising blend of flavor.

Main Ingredients

6 t peanut butter

2 t shortening

2 t honey

1/2 c sugar

1/4 c packed brown sugar

1 tsp vanilla

1 egg

1 1/4 c flour

1/2 tsp baking soda

1/4 tsp salt

1 tsp cloves

1/2 c chocolate chips, lightly chopped


1Preheat the oven to 350 degrees.

2Using a mixer, cream the shortening with the sugar about 1 minute. Add peanut butter and continue creaming another minute. Add honey, vanilla and egg; beat on low speed about 20 seconds or until combined.

3Combine the flour, baking soda, and salt in a bowl. Add to mixer on low in stages until well combined. (This is a slightly wet dough.)

4Add the chocolate chips until well distributed in dough.

5Spoon dollops about 1 inch in size on a cookie sheet. Bake for 9-11 minutes until the cookies look puffy and just barely golden.

6Cool on the pan for 5 minutes before transferring to a cooling rack or paper towels.
