Main Ingredients

2 ripe plantains (outsides blackish yellow)

1 teaspoon melted coconut oil

1/2 teaspoon cinnamon

dash of nutmeg, clove, and cardamon

salt and pepper to taste


1Preheat oven to 375.

2Depending on desired crispness, peel and cut plantain slices roughly one-quarter of an inch thick (more or less depending on how crispy or soft you want).

3In a mixing bowl, toss plantain slices with coconut oil, spices, salt and pepper until coated.

4Spoon onto lined baking sheet.

5Bake for 20-30 minutes or until firm.

6Cool and store in an air-tight container. They will 7-10 days if you keep them in the fridge.
