Main Ingredients

1 pound mashed russet potatoes

1/2 tsp salt

1 cup all-purpose flour, plus more

2 large eggs

1 pound ground beef

2 teaspoons dried italian seasoning

2 cloves (or 1 tsp) minced garlic

2 tsp dried parsley

2 tablespoons grated parmesan cheese

3/4 cup bread crumbs

32 oz jar of marinara sauce

mozzarella cheese (optional)

Preparation

1Once your potatoes have been cooked and mashed, place them on a clean counter top and add flour. (If you miscalculated and made too much or too little mashed potatoes, don't worry; it just means you need to use more or less flour.)

2Make a well on top and add one egg. Sprinkle with salt.

3Using your hands, mash the ingredients together until it makes a dough. If the dough is sticky, continue to add flour until it no longer sticks to your hands, but it should still be soft.

4Roll the dough into several long tubes and cut into bite-sized chunks.

5Place balls of dough in boiling water and remove as soon as they float to the top. (This will only take a few minutes.)

6Once the gnocchi is done, place the ground beef, Italian seasoning, garlic, parsley, and Parmesan cheese in a bowl and mix well with your hands. Add the bread crumbs and mix well.

7Form the meat into balls and place on a rack in a pan so the balls won't sit in the fat drippings.

8Cook at 350 degrees for 15 to 20 minutes.

9Heat marinara sauce in a pan and stir in the meat balls.

10Serve the gnocchi with sauce and meatballs topped with mozzarella, if desired.
