Homemade Elderflower Cordial
Elderflower cordial is the perfect seasonal drink! It's fragrant and refreshing and can be mixed with sparkling water, still water or even wine and champagne.

5 - 6 2 large heads of fresh elderflowers ( stems on each head)
250 g caster sugar
1 tsp white vinegar
1 juice of lemon + zest
1 litre of water
1Wash the elderflowers well, ensuring there are no bugs left behind. Separate the heads into stems.
2Place the sugar, vinegar, lemon juice and water in a large saucepan and bring to the boil.
3Once the sugar has dissolved, remove your pan from the heat and add in your elderflowers, ensuring they are completely submerged.
4Zest the lemon you used for the juice and add it to your pot.
5Cover your pot with a lid and leave to infuse for 24 hours.
6Once your cordial has infused, place a sieve over the top of a muslin bowl and add either a nut milk bag or fine muslin cloth on top. Strain the mixture through the bag/cloth and store your strained cordial in sterilised bottles or jars.
