Holy Guacamole... No Really.
Every year my mother in law takes all of us girls on a beach trip and everyday we make this guacamole! We might actually only eat guacamole on this trip come to think of it. One thing that I think separates it from the rest is lemon. When you think Mexican you think like, but nope- get ya citrus right!

1/4 purple onion
1/2 lemon juiced and strained
1 roma tomato diced
1/3 chopped cilantro
4 ripe avocados diced
1/2 tsp pink himalayan sea salt
1/2 tsp of freshly cracked black pepper
1Cut your avocados in half, take out the pit and slice your knife in a grid like patttern on each side of the avocado.
2Then scoop out the now diced avocado into the bowl.
3Pour in your Lemon juice and do a little toss so that your avocados do not brown.
4Then toss in your onion, tomato, salt and black pepper cilantro and give it a good stir until all ingredients are mixed in evenly.
5Put it into a serving dish and garnish it with more cilantro for company!
You can serve it with blue corn chips, celery, carrots, pita chips.. the options are endless. I also love throwing mine on top of grilled chicken or fish tacos! Enjoy!
