Himmel Und Erde (heaven And Earth)

Himmel und Erde is a German dish, the name translating to Heaven and Earth. Heaven is represented by apples and earth by potatoes. The addition of bacon and onion round out the flavors to make a delicously beautiful side dish. This is a recipe I adapted from

Main Ingredients

1 medium russet or other floury potato

2 medium granny smith apples

1 tbs butter

1/3 cup chopped cooked bacon crumbles

1/4 medium white onion

1/4 medium red onion

salt and pepper to taste


1Cube the potato and boil until just soft. Drain and mash. Set aside.

2Peel and core the apples. Cut into chunks and saute with the butter. Stir occasionally until they become tender and mash them.

3Mix the potato and apple mash together.

4Crisp up the bacon crumbles in the pan. Add them to the mash after about 3-5 minutes of frying over med-high heat.

5Chop up the onion and saute in the bacon grease for about 5 minutes or until translucent. Stir the onions into the mash mixture.

6Season to taste with salt and pepper.

7Serve warm.

Additional Notes

This is really delicious with pork sausage like a bratwurst. I think it would also be great with a pork chop.

For the bacon, I had bought a bag of bacon crumbles at Sam's Club. It is real bacon. It was a nice shortcut. But if you are using bacon strips. I would suggest chopping them up and then frying them.
