Hemp Heart Proat Muffins

Preheat oven to 350 degrees F. In a large bowl combine oats, protein powder, baking powder, cinnamon and sea salt. In a separate bowl combine eggs, vanilla extract, applesauce, yogurt, coconut oil, honey and almond milk. Add wet ingredients to dry and stir to combine. Main Ingredients

3 cups rolled oats (gluten-free if necessary)

3/4 cup of vanilla protein powder (i used nuzest-this was 6 scoops)

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp sea salt

2 eggs 1 teaspoon vanilla extract

1/2 cup unsweetened applesauce

1/2 cup plain or vanilla greek yogurt (i like to use vanilla siggis skyr)

2 tbsp coconut oil, melted

1/4 cup honey

1 cup unsweetened almond milk

2 tbsp hemp seeds (optional)

toppings (all are optional): chopped nuts, blueberries, peanut butter etc…

Preparation

1Preheat oven to 350 degrees F.

2In a large bowl combine oats, protein powder, baking powder, cinnamon and sea salt. In a separate bowl combine eggs, vanilla extract, applesauce, yogurt, coconut oil, honey and almond milk.

3Add wet ingredients to dry and stir to combine.

4Grease a muffin pan very well with coconut oil.

5Divide batter evenly among muffin tin.

6Stir in toppings of choice into each one.**

7Sprinkle hemp seeds evenly across cups.

8Bake for 15-20 minutes until a toothpick comes out clean.

9Let cool for 20 minutes before removing to cool completely. Store in an airtight container for up to a week (or freeze!)
