Main Ingredients

1 1/4 c all-purpose flour

1/2 c cocoa powder

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup granulated sugar

2 tsp vanilla

1 egg 4 tbsp coconut oil, melted

3/4 cup almond milk

1/2 tbsp honey

Preparation

1In a mixing bowl, combine the dry ingredients until blended.

2Add the remaining ingredients on top of the dry and mix after all of the wet ingredients are in the bowl. Use a spoon to scrape the bottom of the bowl to make sure all of the dry ingredients have mixed in with the wet. The longer your mix, the tougher the texture of the pancakes will be. If you'd like to mix in chocolate chips or diced strawberries or something else, fold in 1/2 a cup at this point.

3Heat a skillet over low-medium heat and then melt coconut oil or vegan butter in the skillet, being sure to spread it around so that the whole skillet has been greased.

4Pour about 1/4 cup worth of batter in the skillet. This batter is thicker than regular pancake mix so it won't spread out as much when you pour it in the pan so you may need to use the back of a spoon to spread it out a bit. Make sure the pancake is large enough to fit your heart shaped cookie cutter. Cook until the bottom has almost completely cooked and the middle has started to set, then flip. Continue cooking until cooked the whole way through and the edges have firmed, you may need to flip it a second time.

5After all of the batter has been used, wait just a few minutes before cutting the heart shapes out of the pancakes like you would do with cookie dough. They are extra delicious with maple syrup drizzled over top.
