Healthy Version Of Tostones
A healthy remake of the traditional tostones.

2 plantains, peeled and slice 3/4 inch thick
4 tbsp coconut oil
1 tbsp garlic, minced
1 tsp garlic juice
juice from one lime
1/4 cup olive oil
5 .3 oz plain greek yogurt
1/4 cup honey
1 tsp garlic salt
1Prepare marinade for slices by combining garlic, garlic juice, olive oil and lime juice. Allow to marinate for at least 10 minutes.
2Heat 3 tablespoons coconut oil in saute pan. Add plantain slices and flip when browned to cook other side.
3Drain on a paper towel covered plate.
4Using the back of a spoon or bottom of a can, smash to flatten.
5Add back to marinade for a few minutes.
6Reheat pan and add an additional tablespoon of coconut oil, if needed.
7Add smashed plantain slices back to hot oil and cook approximately two minutes on each side.
8Remove to a paper towel covered plate.
9Prepare dipping sauce by combining yogurt, honey and garlic salt.
