Healthy Red Velvet Muffins
Great way to trick people into eating a healthy breakfast!

1 tsp baking soda
1/4 cup coconut oil
1/2 cup raspberries
2 - 3 tbsp cinnamon
1/2 cup coconut flour
3 tbsp cocoa powder
1/2 cup macadamia nuts
1 cup unsweetened applesauce
flax meal or seeds and chia seeds (topping)
1/8 tsp vanilla or scoop maxpro natural vanilla protein powder (add an additional cup applesauce if mix is too dry)
1 - 3 the little bit of sweetener (monk fruit) in the protein powder is enough for me, but you can add tbsp of honey or agave syrup t
1Combine raspberries, macadamia nuts and cocoa powder in blender.
2Mix all ingredients in a bowl until evenly distributed.
3Set the oven to 400 degrees. Let the mix sit until the cooking temperature is reached.
4Make sure to lightly oil the tin if not using paper cups.
5Put about 1/3 cup in each pocket.
6Top with flax meal or seeds and chia seeds.
7Bake for 15 minutes.
8Serve with grass fed butter. Great for a healthy breakfast or post-exercise protein/omega hit.
