Healthy Ginger Snap Cookies
Healthy Ginger Snap Cookies are great for any holiday!

2 1/4 cup organic sprouted spelt flour (can also use gf flour)
1 tsp freshly grated ginger or 1.5 tsp ground ginger
1 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 cup soft butter
1/4 cup melted coconut oil
1/4 cup dark black strap molasses
1 egg 1/2 cup organic unrefined cane sugar or coconut sugar
1Preheat oven to 350 and line a baking sheet with parchment paper
2In a large bowl mix together all the dry ingredients, except the cane sugar.
3In a separate mixing bowl, add all the wet ingredients and whisk with a hand mixer until well incorporated and smooth.
4Add the dry ingredients slowly in sections and combine until smooth.
5Scoop out enough batter to make a 2-inch ball and roll in the cane sugar. Place on baking sheet and repeat until batter is used.
6Bake for 11 minutes and cool on a cookie rack.
