Healthified "reese's" Cups
A minimal (5-ingredient!) take on a classic Resse's Cup filled with healthy fats.

1 cup natural peanut butter
1.5 oz melted dark chocolate (about 1/2 your average bar)
1/2 cup unsweetened cocoa powder
1/2 cup melted coconut oil
1 tablespoon honey
1Have a muffin cup pan ready - no need to grease prior or no need to line with paper cups.
2Break dark chocolate bar into smaller pieces and place in a microwavable bowl. Melt in the microwave, by microwaving at 30 second intervals until smooth. To the melted dark chocolate, stir in 1/2 cup melted coconut oil (will need to microwave if not in liquid state) and 1/2 cup unsweetened cocoa powder. Stir until smooth.
3In a separate bowl, mix one cup natural peanut butter and one tablespoon honey.
4Fill each muffin cup a little more than halfway with the peanut butter and honey mixture. Then, top off with the dark chocolate mixture. The dark chocolate mixture should equate to about 3 tablespoons per muffin cup.
5Freeze for at least 2 hours. Store in freezer.
I prefer the "Endangered Species" brand of dark chocolate, 88% cacao. If you prefer less bitter, buy a lesser percentage, or feel free to add a tablespoon of honey or two to the dark chocolate mixture.
