Healthier Pumpkin Streusel Bread
Preheat oven to 350 degrees. Spray a 9x5 bread pan with cooking spray. Set aside. For the bread, mix all the dry ingredients (flour through salt) together in a large bowl. 1 1/2 cups whole wheat white flour
1 tbsp pumpkin pie spice (make your own! )
1 tsp ground clove
1 tsp ground nutmeg
1 tsp cinnamon
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
2 large eggs
1 heaping cup pumpkin puree
1/2 cup unsweetened applesauce
1/2 cup honey (or maple syrup if vegan)
1 tsp vanilla extract
1/4 cup oats
1/4 cup chopped walnuts
1 tsp cinnamon
1/4 cup coconut sugar (not packed)
2 tbsp butter, melted
1 tbsp flour

2For the bread, mix all the dry ingredients (flour through salt) together in a large bowl.
3In a separate bowl, mix together the wet ingredients (eggs through vanilla) and combine well.
4Add the wet ingredients to the dry ingredients and stir just until combined.
5Pour the batter into the prepared bread pan and run a spoon over the top to smooth it out.
6Make the streusel, mix all the ingredients together in a small bowl and stir until everything is well combined.
7Sprinkle the streusel evenly over the top of the bread pan.
8Bake for 40-50 min, or until when a toothpick is insert comes out clean. Cool on wire rack.
9Store in airtight container for up to 1 week, or freeze up to 1 month.
