Main Ingredients

1/2 cup coconut oil, melted

2 cups coconut sugar

2 cups cassava flour

2 tsp baking powder

1/2 tsp salt

1/2 cup paleo powdered sugar

Preparation

2Blend in the eggs, one at a time. Then add in the vanilla.

3Stir flour, baking powder, and salt into oil mixture. Mix well. Chill for three hours.

4Shape a teaspoon of dough into a ball and roll in the paleo powdered sugar.

5Bake on a cookie sheet lined with parchment paper at 350F for 8-10 minutes, turning the sheet halfway through.

6Once they're out of the oven, transfer to a wire cooling rack and try to resist the urge to taste until completely cooled!
