Hawaiian Lime Chicken Thighs
This is such an easy recipe and loaded with flavor. Great for the summer or really anytime that you want to imagine yourself in Hawaii, for that matter!

2 lbs . of chicken skinless thighs
2 t. dried coriander
4 t. chili powder
4 garlic cloves, crushed
2 t. ground oregano
2 lemons juiced
3 limes juiced
1Place chicken thighs in bowl and cover with cold water and juice from 2 lemons. Set in fridge for at least 2 hours. I did mine for 24 hours.
2Preheat oven to 350 degrees.
3In a bowl, mix together chili powder, oregano, coriander and crushed garlic.
4Rinse chicken off - add to bowl with spices. Add lime juice and mix well.
5Place mixture in a baking pan and place in warm oven. Baste after 30 minutes and cook for 1 hour or until thighs measure 180 internal temperature.
