1 pound pasta (i used casarecce)
1/2 cup olive oil
2 large garlic cloves, finely chopped
3 pints cherry tomatoes
1/2 teaspoon freshly ground black pepper
1 cup coarsely chopped fresh basil
freshly grated parmesan (for serving)
1Cook pasta in a large pot of boiling salted water, stirring occasionally, until al dente; drain (reserving 1/2 cup o pasta water) and transfer to a large bowl.
2Meanwhile, heat oil in a 12" skillet or wide heavy saucepan over medium-high heat.
3Once oil is hot add garlic, then tomatoes, pepper, and 1 tsp. salt. Cook, stirring occasionally until tomatoes burst and release their juices to form a sauce (add small amounts of pasta water if you find the tomatoes are getting to dry or sticky), 6–8 minutes.
4Toss pasta with tomato sauce and basil. Top with Parmesan.
If you are sensitive to dairy skip the parmesan
If you are celiac or gluten sensitive try using a gluten-free pasta
