Main Ingredients

2 pieces of thick cut sourdough bread

4 slices of baby swiss cheese

3 - 4 oz thinly sliced prosciutto (you want 4 slices for 2 people)

2 eggs, large

1 bunch of frisée or other bitter green, roughly chopped. arugula will work, but frisée is better (about 2 loose handfuls)

1 lemon, juiced (about 2 tbsp)

4 olive oil (about tbsp)

salt

cracked black pepper

butter

Preparation

1Heat a frying pan over medium heat. Butter both sides of your bread slices and place in pan to toast. Toast until golden brown, about 3-5 minutes per side.

2While still hot, top each piece of bread with swiss cheese and let it melt a little.

3Take toast of of pan. Using the same frying pan, melt 2 tbsp of butter. Once foaming subsides, crack eggs into pan. Season with salt and pepper.

4Cook eggs until white are set but yolks are still runny.

5In bowl, whisk together lemon juice with about double the amount of olive oil. Season with salt and pepper. Add greens to the bowl, toss, and set aside.

6On a plate, top cheese covered toast with two slices of prosciutto, one of the fried eggs and half of the bitter green salad. Serve immediately.
