Main Ingredients

2 lb ground chuck

2 stalks celery, diced

1 large onion, diced

3 - 4 cloves garlic, minced

3 tbs tomato paste

1 14.5- ounce can diced tomatoes

3 c beef stock, plus more if needed

1 tbs dried italian seasoning

1/2 tsp kosher salt, or more to taste

1/2 tsp freshly ground black pepper, or more to taste

1/4 tsp cayenne pepper, or more to taste

5 red potatoes, cut into chunks

4 carrots, washed and sliced on the diagonal

1 red bell pepper, seeded and diced

1 orange bell pepper, seeded and diced

1 pkg frozen green beans

1 pkg frozen corn


1In large pot, brown hamburger, drain and set aside. Reserve 1 TBS fat in pan. 

2Add celery and onion, cook down for about 5-7 minutes then add garlic until aromatic. 

3​Add tomato paste to cook down with vegetables. It'll get a little dark. 

4​Pour in a little beef stock to deglaze and scrape off the good bits from the bottom of the pan. 

5​Add the diced tomatoes, remainder of the stock and the Italian Seasoning, salt, pepper and cayenne. bring to a boil then turn to low simmer. Then add potatoes carrots, bell peppers and cook until the potatoes are tender.  After about 15 minutes, add in the corn and green beans and cook for another 10 minutes until the beans and corn are cooked through.

6This can be done in under an hour and you can be enjoying a great meal with your family! Serve with some crusty bread and you are sure to have a hit!
