Ham And Cheese Broccoli Soup
This is a delicious way to use up left over holiday ham and vegetables.

3 c broccoli, broken into small pieces
1/2 chopped onion
enough water or broth to cover the vegetables
1 t salt and 1 tsp pepper, or to taste
1/2 c butter
3 t flour
2 c. milk or half and half
2 c. shredded cheddar cheese
2 c. ham, chopped
1Prepare all of the ingredients that need to be chopped . Cover the vegetables with water and put on to simmer. Add the salt and pepper. Allow the vegetables to cook for about 20 min. During this time, prepare the white sauce.
2Melt the butter in a small sauce pan. Mix the flour into 1 c of the milk. Blend the flour/milk mixture into the melted butter and cook over medium heat until it starts to thicken. Add the rest of the milk. Heat to boiling and stir until it is a thick sauce. If the vegetables are ready, pour the white sauce into the pot and stir it all together. Bring the mixture to a simmering boil and then add in the ham and the cheese. Heat and stir until the cheese is melted. Taste it and see if it needs more seasoning.
3Serve with crackers!
