Grilled Chicken Panini With Lemon Oregano Sauce
Smoky Parmesan cheese and baby spinach compliment this grilled chicken breast on whole grain wheat bread and slathered in lemon oregano sauce in this panini.

1/2 tsp. table salt
1/8 tsp. black pepper
2 tbsp. chopped oregano (dried oregano, optional)
1/2 cup olive oil
1/2 tbsp. juice of fresh squeezed lemon
1 skinless boneless chicken breast (about lb.)
8 whole grain wheat bread slices
1/2 lb. parmesan cheese, sliced
1/2 cup loosely packed baby spinach
3 tbsp. butter, melted
1Preheat grill to 350 to 400.
2Stir all sauce ingredients into a large bowl.
3Place chicken breast in a separate bowl and pour half the sauce on top. Stir until chicken is covered. Let sit until oven is done heating.
4Grill chicken, covered with the grill lid for 7 to 10 minutes on each side or until done. Let stand for 5 minutes.
5Spread melted butter on 1 side of each bread slice. Top 4 bread slices with chicken, spinach, Parmesan, and sauce. Top with remaining bread slices, buttered sides up.
6Cook sandwiches, in batches, in preheated grill or panini oress for 2 to 3 minutes or until golden brown.
