Green Velvet Cupcakes With Bailey's Cream Cheese Frosting
St. Patrick's Day isn't complete without these Green Velvet Cupcakes with Bailey's Cream Cheese Frosting!

2 cups plus 2 tbs of all-purpose flour
41/2 tablespoons corn starch
2 tbs cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 cup butter, room temperature
11/2 cups sugar
3 eggs, room temperature
11/4 cup sour cream
1 tbs vanilla
1 tsp green liquid food coloring
4 cups confectioner's sugar
1/2 cup of butter, softened
8 oz cream cheese, room temperature
4 tbs bailey's irish cream (optional)
2Preheat oven to 350 degrees
3Line muffin tins with cupcake liners (makes 24 cupcakes)
4In a large mixing bowl, combine dry ingredients: flour, corn starch, cocoa powder, baking powder, baking soda, and salt.
5With either a stand mixer or hand mixer, cream butter (about 2 minutes). Beat in eggs one at a time until blended. Add sour cream, vanilla, and food coloring and combined.
6Slowly add dry ingredients to the wet, and combine, scraping the sides of the bowl as needed.
7With a large cookie scoop or spoon, fill cupcake liners halfway.
8Bake for 15 minutes or until toothpick comes out clean. Let cool completely before frosting.
10With a stand or hand mixer, cream butter on high speed.
11Lower speed to low, and add confectioner's sugar to creamed butter and combine.
12Add cream cheese a little at a time, until smooth and blended.
13Finally, add the Bailey's and mix until well combined.
