Greek Style "hidden Veggie" Meatballs, Baked In Tahini Sauce

Preheat oven to 425 and line a baking sheet with foil Mix all ingredients for meatballs by hand and roll into golf ball size meatballs. Bake in the oven for 10 minutes Whisk all ingredients for sauce together Remove meatballs from pan and place in baking dish topped with sauce. Bake for another 10 minutes. Broil on high to finish and brown about 2-3 minutes. Garnish with mint!

Main Ingredients

1 lb ground beef

1 egg 3 tablespoons coconut flour

2 tsps coconut aminos

2 handfuls fresh spinach chopped small in a food processor

3 cloves minced garlic

1/4 tsp each of cinnamon, nutmeg and cumin

1 tsp dried oregano

1/2 tsp salt

1/2 tsp pepper

tahini sauce:

1/3 cup tahini

1 juice of lemon

1 tablespoon olive oil

1/4 cup water

1/4 tsp cumin

salt, pepper and garlic powder to taste

extra: handful of mint for garnish
