Main Ingredients

1 - 1/2 pounds brussels sprouts, rimmed and halved lengthwise

1 medium onion, cut into small chunks

extra virgin olive oil

kosher salt and freshly ground black pepper

6 ounces prosciutto, chopped

1 cup heavy cream or crémefraiche

1/2 pound gruyère cheese, grated

1/2 cup panko


1Preheat the oven to 400 degrees.

2Put the Brussels sprouts and onion chunks into a large bowl, drizzle in enough olive oil to coat and season with 1 teaspoon salt and lots of freshly ground pepper. Toss to distribute the oil.

3Spread over a rimmed baking sheet and roast until the sprouts are mostly tender, 15 to 20 minutes. Leave the oven on.

4Transfer the Brussels sprouts to a gratin dish that's large enough to hold the sprouts in a mostly single layer. Sprinkle the prosciutto around the vegetables, pour the cream over everything and top with the Gruyère.

5Top with the breadcrumbs and bake until the cheese and cream are bubbling, 15 to 20 minutes. Let cool for about 5 minutes. Serve hot.
