Grapefruit & Fennel Trout

Main Ingredients

1 lb trout filet, rinsed and pat dry

1/2 pink grapefruit, juiced

1 cup fennel greens/tops, chopped

6 - 8 thin slices of grapefruit, cut in half

1 tbsp grapeseed oil

2 tbsp vegan butter

sea salt/pepper to taste

*optional-lime and thin slices of grapefruit


1Preheat oven to broil (525-550 degrees)

2Place trout filet on a coated sheet pan.

3Apply oil to fish, coating both sides.

4Season both sides with salt and pepper.

5Skin side down, pour grapefruit juice on top of the trout.

6Add fennel greens/tops on top of the filet.

7Add thinly sliced grapefruit sparingly onto fish.

8Divide vegan butter into 4 pieces and apply evenly on top of the fennel covered trout.

9Broil for approximately 10-12 minutes, until trout is 'just' done in the middle. Remove from oven and let rest for 2-3 minutes.

10Finish with a squeeze of lime and thin slices of grapefruit.
