Grapefruit Avocado Salad With Pomegranate Vinaigrette
Just imagine- the cool creaminess of the avocado, the tang of the goat cheese, the tartness of the grapefruit, the tangy pop of the pomegranate, the crunchiness of the nuts- all atop a bed of crisp greens and adorned with a smooth pomegranate vinaigrette.

6 cups pre washed mild greens such as spinach or spring mix
2 sliced avocados
2 peeled and segmented grapefruits
1 cup pomegranate arils
1 cup crumbled goat cheese
1 cup spiced nuts
1/2 cup extra virgin olive oil
1/2 cup pomegranate juice
1/4 cup pomegranate vinegar
salt and pepper to taste
1Divide greens, avocado, grapefruit, goat cheese, and nuts onto 8 salad plates. Chill until ready to serve.
2In a mason jar or container with a lid, combine olive oil, juice, vinegar, and dashes of salt and pepper. Shakey shaky and drizzle over each salad. Store leftover dressing in mason jar in the refrigerator for two weeks.
