Grain Free Wolfberry Energy Bars

I don't know about you, but I'm a good snacker!! I love these Wolfberry grain free energy bars because they satisfy my snacking sweet tooth but they're packed with amazing fuel for my health.

Did you know the gogi or wolfberry is considered one of the most nutritionally dense fruits found in nature?! And that is exactly why I try to add them to our food whenever I can!! #eattolive

Main Ingredients

1 cup raw almonds, chopped

1 cup pecans or walnuts, chopped

1 cup unsweetened coconut flakes

1 large egg

4 tbsp raw honey

2 tbsp nut butter of your choice

2 tbsp coconut oil

1 - 2 drops of cinnamon bark vitality oil

1 - 2 drops of orange vitality oil

3/4 tsp sea salt

1/4 - 1/2 cup ningxia wolfberries

1/4 - 1/2 cup chocolate chips


1Preheat oven to 350 degrees and line an 8x8 inch pan with parchment paper.

2In a large bowl, whisk together the egg, cinnamon bark & orange essential oils.

3In a separate small saucepan, melt the almond butter, honey and coconut oil until smooth. Remove from heat and whisk into the egg mixture until well combined.

4Add in all the nuts, coconut and salt and stir until well combined. Finally, stir in the chocolate chips and wolfberries.

5Press VERY firmly into the prepared pan. Pack the mixture down firmly so they hold together.

6Bake until the top just feels set, about 15 minutes at 350 degrees. Let cool.
