Grain Free Cashew Coconut Bread

I found this recipe on Dish by Dish blog. The bread is moist, soft, nutty & delicious. Plus, all nut based ingredients including the flour, milk and actual nuts blended & added means higher protein & grain free. D-E-L-I-C-I-O-U-S with some grass-fed butter!

Main Ingredients

3 cups of whole, raw cashews

7 tablespoons of coconut flour

8 large eggs

1/2 cup coconut milk

4 teaspoons apple cider vinegar

4 teaspoons baking powder

1 teaspoon salt

Preparation

1Place a heatproof dish with 2 inches of water on the bottom rack of your oven and preheat oven to 325 deg Fahrenheit - I know it's weird, just do it.

2GREASE a large loaf pan. Lining with baking paper is a good idea too. I didn't have any, so I greased the shit out of that pan.

3Place the cashews, coconut flour, eggs, coconut milk, apple cider vinegar, baking powder and salt into the blender or Ninja and process it until you get a very smooth mixture.

4*If mixture is too thick, add in 1 tablespoon of water at a time.

5Pour batter into loaf pan and bake for around 60 to 65 minutes, or until a knife inserted in the middle comes out clean.

6Allow the bread to cool in the pan & let completely cool before storing or serving.

Additional Notes

I did not have a blender, so I partitioned mixture up and blended in my Ninja. THAT'S HOW EASY THIS RECIPE IS! A blender is ideal though.
