Main Ingredients

1 1/2 cups oat flour

2 tsp baking powder

1/2 tsp salt

3/4 cup room temperature canned coconut milk

1/4 cup grapeseed oil plus 1 extra tbsp

2 tbsp maple syrup

1 tsp vanilla extract

2 room temperature eggs

1 1/2 tsp tumeric

1/2 to 3/4 tsp ground cinnamon

1/2 tsp ground ginger

1/4 tsp coriander

1/8 tsp nutmeg

1/4 tsp cardamom

chopped and pitted dates, to serve

shredded coconut, to serve

Preparation

1In a small bowl, combine all wet ingredients...eggs, milk, oil, vanilla extract, maple syrup. Set aside.

2To make oat flour if necessary, measure out 1 1/2 cups gluten free oats and either put in a blender or food processor and blend to a fine crumb.

3In a large bowl, combine all dry ingredients and spices. Whisk to combine. Add in wet ingredients and mix all together.

4Allow batter to sit for at least 10 minutes. During this time, preheat & grease waffle iron.

5When ready, measure out batter & cook per your waffle maker's instructions. I used 1/3 cup to measure my batter and I cooked it on a medium low setting.

6Remove from iron when they're done. Cool on a wire rack.

7Serve with ghee, chopped dates & shredded coconut if desired. Enjoy!!
