Goji Berry Breakfast

Goji Berries are a super-food wonder, full of anti-oxidants and phytonutrients that have been shown to help with more restful sleep and anxiety. Read the Great Goji post for more info on these little jewels. For this breakfast treat you can actually use whatever berry you like, but try the goji berries for a nice change. In this recipe I use 2 anti-oxidant giants, the goji and blueberry. Soak the dried goji berries first for a few minutes or they'll be too chewy.

Goji Berry Breakfast

1/4 cup granola

1/4 cup coconut milk (you can use the kind in the refrigerated cartons or canned-the canned is richer though, yum)

1/4 cup of your goji berries

1/4 cup fresh or frozen blueberries

1/4 tsp ground ginger

1/4 tsp ground cinnamon


1Gently fold the berries and milk together, top with granola and top with the ginger and cinnamon. Very energizing and light. Makes one respectable serving.
