Gluten Free Grapefruit (goat Milk) Yogurt Cake
This recipe is adapted from Sally's Baking Addiction to be gluten free and cow-milk free.

1 1/2 cups bob's red mill gluten free one - to - one baking flour
1 1/2 tsp baking pwder
1/2 tsp salt
3/4 cup (one single serve container) goat - milk yogurt (or sheep's milk)
1 cup packed brown sugar
1/2 canola oil
1/4 cup freshly squeezed red grapefruit juice
1 1/2 tbsp grapefruit zest
1 tsp vanilla extract
~ the glaze ~
1 cup powdered sugar
2 tbsp grapefruit juice
1/4 tsp vanilla extract
1Preheat oven to 350 F. Grease a loaf pan (typically 9x5in)
2Whisk together gluten free flour, baking powder, and salt in a large bowl, set aside.
3In a medium bowl, whisk the eggs until thoroughly combined. Once mixed, add in yogurt, brown sugar, oil, grapefruit juice and zest, and vanilla extract.
4Mix with a wooden spoon or spatula until combined, but do not overmix!
5Pour batter into loaf pan and bake for 45-50 minutes. The cake is done when a toothpick (or knife) inserted into the center comes out clean!
6Let cake cool on a wire rack completely before glazing.
7Whisk together glaze ingredients and drizzle over cake.
