Gluten Free French Strawberry Cake

Found this recipe on Pinterest while looking for something to do with all the fresh strawberries I picked. I adjusted the recipe to make it all organic, gluten free, and low glycemic.

Main Ingredients

1 stick organic grass-fed butter

1 1/4 c. organic coconut sugar

2 large organic pasture raised eggs

1 t. vanilla

1 1/3 c. organic gluten free flour blend (for baking)

1 1/4 t. baking powder

1/4 t. himalayan pink sea salt

1/2 c. organic full fat sour cream

16 0z. fresh strawberries stemmed and halved


1Preheat oven to 350 degrees. Spray or grease 9 in round cake pan, set aside

2In mixer, whip together butter and 1 cup of sugar, then add eggs one at a time, beat well then add vanilla

3In medium bowl, whisk flour, baking powder, salt. Gradually add the flour mix to butter mix alternating with adding sour cream, starting and ending with flour mix, until all combined.

4Fold in strawberries. Spread into pan, sprinkle top with remaining sugar evenly.

5Bake 35-40 minutes. Let cool, sprinkle powdered sugar and serve!
