Main Ingredients

1 cup coconut flour

1 teaspoon of ground cinnamon

3/4 teaspoon of baking soda

1/2 teaspoon fine sea salt

4 large eggs

3 - 4 1 2/3 cup or large overripe bananas mashed

1/3 cup chopped dates (softened in hot water)

2 teaspoons vanilla extract

1/4 cup virgin coconut oil melted

Preparation

1Preheat the oven to 325F. Line a 9x5-inch loaf pan with parchment paper; grease the paper with coconut oil.

2In a medium bowl, whisk the coconut flour, ginger, cinnamon, baking soda, and salt.

3In a large bowl, whisk the eggs until blended; whisk in the bananas, dates, and vanilla (do not add the oil yet).

4Add the flour mixture to the banana mixture, stirring until blended and smooth.

5Whisk in the coconut oil until blended. Scrape the batter into the prepared pan, smoothing the top with a spatula.

6Bake in the preheated oven for 35-40 minutes or until a skewer inserted in the center comes out clean.

7Cool in pan for 15 minutes and then use the parchment paper to lift the bread from the pan onto a cooling rack, Serve warm or cool completely.

Additional Notes

I love to spread creamed honey on mine as shown in the picture but almond butter or coconut butter is also delicious!
