Moo Prik Thai (white Pepper Pork)
A Thai breakfast dish usually served with a side of eggs and rice porridge. Great hangover food.

3/4 pound lean pork loin, sliced against grain.
1/2 teaspoon ground white or black pepper
2 tbsp vegetable oil
2 cloves of minced garlic
1 tsp ginger, minced
1 small white or yellow onions, peeled, halved lengthwise, and cut into 1/2- inch wedges
1 tablespoons dark soy sauce
1 tablespoon light soy sauce
1/4 tsp salt, to taste
1In a bowl, combine white pepper powder, a pinch of salt, dark soy sauce, and white pepper powder in a bowl.
2Heat 1 tablespoon oil in a saute pan over medium heat. Place the marinated sliced pork in the pan and let cook 3-5 minutes. Add garlic and ginger and stir.
3Add onion and cook until translucent but not completely soft. Add salt to taste.
4For extra spice you can add a mashed thai chilli or dried whole chillies here.
5Serve with a side of steamed rice or plain rice congee.
