Main Ingredients

1/4 cup pureed avocado

1/4 cup extra - virgin olive oil

1 cup all - purpose flour

1/2 cup unsweetened cocoa powder

3/4 cup cane sugar

1 teaspoon baking soda

1/2 teaspoon salt

3/4 cup water

1 bar dark chocolate, roughly chopped

Preparation

1Preheat oven to 350 degrees F (180 degrees F).

2In a blender, mix together avocado and olive oil until a smooth consistency is formed.

3In a large bowl, pour in flour, cocoa powder, sugar, baking soda, salt, and water. Stir until smooth.

4Pour into a prepared pan and spread the batter evenly throughout the pan. Sprinkle with dark chocolate . Bake for 15-20 minutes, or until a toothpick inserted into the center comes out mostly clean. Don't over bake! You want a gooey mess.

5Let brownies cool for a few minutes before serving with vanilla ice-cream.

Additional Notes

Gimme Some Oven suggest using a coffee / water mixture, however when I tried, the coffee flavor wasn't strong enough.
