German Chocolate Cake Energy Bites

14 medjool dates, pitted and soaked in water
1/2 cup shredded coconut
1/2 cup cocoa powder (unsweetened)
1 cup pecans
1/4 cup mini vegan chocolate chips
1Prepare a platter or baking sheet by lining it with wax or parchment paper. Soak dates for 15 minutes.
2In a food processor, process pecans into a fine crumble. Set aside.
3In the same food processor, blend the dates until they form a paste, about 1 minute.
4Add the pecans back to the food processor with the dates, and add the coconut and cocoa powder. Process again until it forms a dough, about 2 minutes.
5Stir in the mini chocolate chips.
6Using a spoon, scoop small amounts of the dough and form into a round ball, slightly smaller than the size of a golf ball. Place on the prepared dish and continue with remaining dough until its gone. I was able to make 16 balls but this will vary depending on the size you make them.
7Place in the refrigerator for a few minutes to solidify, and keep extras in an airtight container in the fridge for up to one week.
