1 cucumber, peeled
1 red bell pepper
2 Cloves of garlic
1 branch of basil
salt and pepper
1Chill ingredients in the fridge overnight if possible.
2Dice all ingredients and blend until smooth. This can be done in batches if your blender is small.
3Chill in the freezer until cold through.
4While your soup is chilling, thinly slice baguette and toast in a pan with olive oil over medium high heat.
