Ingredients

8 ounces of diced thick cut bacon or pancetta

[when i purchase bacon or pancetta for this kind of use, i freeze it for easy cutting]

1 lbs of linguine

1 lbs of peeled deveined shrimp

1/2 onion diced

3 tablespoons of unsalted butter-salt and pepper (to taste)

1 tablespoons of garlic paste

1/2 - 1 can of diced tomatoes

1 tablespoon of tomato paste

1 cup of your choice of dry white wine

3/4 cup of chicken stock

3/4 cup of heavy cream

1 cup of frozen peas

1/2 tablespoon of lemon juice

pinch of lemon zest

1 cup of shredded or grated parmigiano reggiano

1/4 cup of chopped fresh basil

Preparation

1Bring a large pot of salted water to a boil over high heat. Add 1 Lb of linguine and cook until al dente. Stir occasionally, 8 to 10 minutes.

2Drain and reserve about 1 cup of the pasta water.

3Place pot over medium heat, Add diced Bacon and cook, stir frequently until golden and crisp. Remove and set aside to drain on paper towel

4Add 2 tablespoons of butter

5Add onions and cook for about 10 seconds

6Add half a cup of wine and pick up brown bits on the bottom of pan

7Add Salt

8Cook onions for about another 1-2 minutes until partially soft

9Add Garlic and stir about 30 seconds

10Add half can of Diced Tomatoes

11Add red pepper flakes, salt, black pepper

12Add tomato paste and paste until fragant

13Add other half cup of white wine and cook through

14Add Chicken stock

15Add remaining tablespoon of butter

16Add heavy cream

17Add Cup of peas

18Add Lb. of Shrimp and stir. Cook about 1-2 minutes

19Add bacon that was set aside

20Add Lemon juice and zest

21Turn Heat off add Linguine and Pasta Water

22Add Basil and Parmigiano Reggiano, stir all ingredients together

23Before combining, add Parmigiano Over Pasta (it helps sauce stick to pasta)
