Garlic Roasted Cauliflower

This recipe is one of my favorite ways to prepare cauliflower--just chop, roast, and toss with the lemon garlic dressing, and you're done!

1 cauliflower head

1 - 3 tbsp grapeseed, rice bran, avocado, or olive oil

1 garlic clove, minced

1 juice of lemon

1 - 2 tbsp chopped parsley (to garnish)


1Preheat the oven to 400ºF (200ºC). Chop the cauliflower into equal sized florets, wash and drain.

2For the dressing:

3In a mixing bowl, add the oil, garlic, lemon juice, salt and pepper, and whisk together.

4Toss the cauliflower florets in the dressing. Line a baking tray with parchment paper and lay the cauliflower so that the space between each floret is equal.

5Roast for 8-10 minutes, and flip the florets so that all sides roast evenly. Place the tray back in the oven for 4-5 minutes until cooked through.

6Transfer to serving dish.

Additional Notes

The dressing can be played with -- you can add any spices and/or herbs that you like!

You may also use broccoli for this recipe.
