Garlic + Paprika Roasted Baby Potatoes

1 1/4 pounds baby potatoes (larger ones sliced in half)
2 tablespoons olive oil
2 teaspoons chopped fresh rosemary
freshly ground black pepper
1/2 teaspoon paprika
1 small shallot, thinly sliced into rings
1 garlic clove, thinly shaved
1Preheat the oven to 425° F.
2On a large baking sheet, toss the potatoes with the olive oil, rosemary, and a generous pinch each of salt and pepper.
3Bake, tossing several times, until the potatoes are lightly golden brown, about 15 minutes.
4Lower the oven to 300° F.
5Toss the paprika, shallots, and garlic into the potatoes and cook until the shallots are translucent and the garlic has softened, about 8-10 more minutes.
6Season to taste with additional salt and pepper.
