Game Day Cauliflower Buffalo Wings

1 - 1 1/2 cup almond milk or water (add more if needed)
1 cup whole wheat flour (or gluten free flour mix)
1/4 cup bread crumbs
1 - 2 tbsp hempseed
1 tbsp onion powder
1/2 tbsp garlic powder
1/4 tsp pink himalayan salt
1/4 tsp ground pepper
1 - 1/2 cup frank's buffalo wing sauce
1Line a baking sheet with parchment paper and preheat your oven to 400 degrees.
2Wash the cauliflower, remove any leaves and the core of the cauliflower, then cut the cauliflower into small- medium pieces (aka. florets) and place these cauliflower pieces into a large mixing bowl.
3In a separate bowl mix all the ingredients expect for the Franks Buffalo Wing Sauce. This will make the batter. Mix or whisk until all ingredients are evenly combined. The batter should thin enough to coat the cauliflower. If your batter seems too thick, add more water or almond milk. If the batter is too thin, add more flour or bread crumbs to thicken it up.
4Once the consistency of the batter just is right, pour the batter over the cauliflower pieces in the large mixing bowl.
5Stir with a large spoon and ensure each cauliflower is evenly coated with the batter.
6Lay the coated cauliflower flat on the parchment lined baking sheet.
7Bake for 25-30 minutes or until golden brown. Baking time will vary depending on the thickness of the batter and the size of the cauliflower pieces. It is helpful to check on them every 10 mins.
8Flip the coated cauliflower pieces and bake for another 10-15.
9While the cauliflower is baking, clean the large mixing bowl to remove all the excess batter. Once cleaned, pour the Frank's Buffalo Wing Sauce into the bottom of the mixing bowl.
10Once the cauliflower is golden brown on both sides, remove from the oven and place all the pieces in the large mixing bowl with the Frank's Buffalo Wing Sauce.
11Gently toss the crispy cauliflower in the Frank's Buffalo Wing Sauce until each piece is evenly coated.
12Serve with a healthy dip and a side of carrots and celery (or cucumber) and enjoy!
