Fudgy Chocolatey Brownies

The name speaks for itself: fudgy and chocolatey. Perfectly crunchy on the outside, soft and "choc" full of dark chocolate chunks on the inside, these brownies are decadent yet light enough for seconds... or thirds!

Ingredients

2 1 cup gluten-free all-purpose flour

1/2 tsp salt

1/4 tsp baking soda

3/4 cup cane sugar (can be subbed for coconut sugar)

1/2 cup coconut oil, melted

1/4 cup water

1 tsp pure vanilla extract

1 bar of chocolate, chopped and melted (for batter)

1 cup chopped chocolate bar, unmelted (or chocolate chips)

Preparation

1Prepare your flax eggs in a small bowl. Stir and set aside until it thickens and you are ready to use it.

2Preheat the oven to 325 F.

3In a medium bowl, mix flour, salt, and baking soda.

4In a separate bowl, whisk sugar, melted coconut oil, water, flax eggs, and vanilla until mixed. Pour wet ingredients into the dry ingredients bowl and stir. Melt the chocolate in a small, microwave-safe bowl in 1 minute intervals.

5Pour melted chocolate into the batter. Use a rubber spatula to stir. Once mixed, fold in chopped unmelted chocolate. Gently fold until chocolate chunks are incorporated.

6Pour batter into a greased (with vegan butter or oil) 8x8 pan. Use the rubber spatula to spread the batter around the pan and even it out. Bake for 35 min.

7Use a toothpick to check the center. If it comes out clean, it’s ready. If not, bake in 5 minute intervals until the toothpick comes out clean.

8Leave to cool completely in pan so the brownies can set properly. Cutting and serving before the brownies are completely cool will result in brownies that fall apart.

9Once cool, enjoy with a dollop of coconut whipped cream and raspberries!
