Fried Cinnamon Plantains

1 ripe plantain
1 - 2 tablespoons coconut oil
1 tablespoon cinnamon
1Open plantain like a banana and discard the peel
2Cut plantain into thin slices
3Heat 1 tablespoon of coconut oil on low in skillet
4Once coconut oil is melted, add plantains in even layer on pan
5Sprinkle cinnamon on top of plantains
6Cook on med-low until bottom becomes golden brown
7Flip plantains to other side. Sprinkle cinnamon on this side and add more coconut oil if needed. Once both side are golden brown, let cool for 5 minutes and enjoy
8Drizzle peanut or almond butter on top! Add any additional toppings you would like.
Can be used as dessert, breakfast side, snack or appetizer!
