Four Nut Grain-free Blender Bread

This recipe is adapted from the Momables website. I leave out the honey and I use Jacobsen's Finishing Sea Salt (the best!) and a combination of raw nuts such as pistachio, macadamia, cashew and Brazil nuts. This recipe does require you to use either a Vitamix or Blendtec type blender in order to grind the whole nuts into a batter. Bread tastes great toasted and not toasted.

Main Ingredients

5 large eggs

2 cups whole raw nuts (any combination-cashews, macadamia, walnut, brazil)

2 tablespoons coconut oil, melted

2 tablespoons coconut flour

1 teaspoon baking soda

1/4 teaspoon jacobsen's finishing sea salt

1 tablespoon unfiltered apple cider vinegar


11 Preheat oven to 350 F and grease a 7 x 3 loaf pan with ghee - dust with almond flour

2Blend to combine.

3Blend again. Batter will be thick.

4Use a spatula, loosen sides and invert onto the rack to cool completely before cutting into slices.

Additional Notes

This recipe can be easily doubled and fit into the blender to yield two loafs. After bread is cooled I slice into 14 slices and freeze the loaf. Two slices equal approximately 5 net carbs.
