Fluffiest Sweet Potato Waffles

First steam & cool your sweet potato (or use puree) Next grate your zucchini and remove all water. Then combine all your ingredients into a batter. Heat a waffle pan to about 400 degrees F and spray with coconut oil. Cook waffles for about 3-4 minutes each until golden brown around edges. I like to top mine with drippy nut butter!

Main Ingredients

6 tbsp cassava flour this is equal to 1/4 cup and 2 tbsp (i like otto's brand)

2 heaping tbsp ground flax seeds

2 tsp pumpkin pie spice and/or cinnamon

1 cup sweet potato steamed, cooked, mashed (do this ahead of time or use puree)

1/2 zucchini shredded, water removed (if you want you can skip this and just do a little extra sweet potato)

4 eggs

1 - 2 tbsp sweetener (optional) i usually skip this but you can add it for a sweeter waffle

1 - 2 tbsp almond milk to thin

Preparation

1First steam & cool your sweet potato (or use puree)
