Main Ingredients

6 tablespoons butter, softened

1/2 cup brown sugar

1 Egg

1 teaspoon vanilla

1 cup shredded zucchini

1 cup oat flour (all purpose or whole wheat flour work also!)

2 cups old fashioned oats

1 teaspoon baking powder

1/2 teaspoon salt

1 cup mini chocolate chips


1Preheat oven to 350 degrees Fahrenheit. Line 2 baking sheets with parchment paper.

2Cream butter and sugar until light and fluffy, about 2 minutes (I recommend using an electric mixer or the paddle attachment on a stand mixer). Add in egg and vanilla and mix until combined. Stir in zucchini.

3In a medium bowl, combine oat flour, baking powder, and salt. Whisk to combine. Add dry mixture to zucchini mixture and stir to combine. Fold in oats and chocolate chips.

4Bake for about 12-15 minutes, until lightly brown and set in the center.
