Flax Freezer Waffles

I developed this recipe because I needed a nutritious option for weekday meals for my kids. I make a few batches of these at one time and freeze them. I just pull them out of the freezer the night before or the morning of and pop them into the toaster!

Main Ingredients

3 1/4 cup einkorn flour (or gluten-free flour)

2 tsp baking powder

1 tsp baking soda

2 tsp salt

1/2 cup applesauce

1 medium egg or 1 mashed banana

3 cup almond milk

1/2 cup ground flaxseed

2 tbsp chia seeds

2 tsp vanilla extract

1 tsp cinnamon


1Spray a waffle maker with coconut oil and then re-apply between each set of waffles.

2Cook according to the instructions on the waffle maker.

3Once removed from the waffle maker, place on a cooling rack so that the bottoms of the waffles don't get soggy.

4Serve immediately or allow to cool before placing in freezer bags.
